DEALCOHOLAZATION PROCESS

In order to achieve good non-alcoholic wine, firstly we need to make good quality bulk wine, which will be later on under the dealcoholisation process.

For this process, we use the evaporation technique, with vacuum distillation . This system is less aggressive than the conventional extraction technique. By using this evaporation system, the aromas and flavours are properly preserved and at the same time, there is not so much risk of missing the aromatic components of wine.

As a result, we obtain non-alcoholic wine keeping all the aroma, flavour and body characteristics of ordinary wine, but without alcohol. Moreover, it also preserves the good components for our health already existing in the original wine, such as polyphenols, anthocyanins and antioxidants.
