2. LEAVE THE PIECE AT ROOM TEMPERATURE BETWEEN 18C TO 26C FOR 48 HOURS BEFORE EATING (TASTING)
3. REMOVE THE OUTSIDE SKIN OF THE PIECE BEFORE SLICING
4. BEST SLICED THE BEEF WITH MAXIMUM OF 30 MINS BEFORE EATING (TASTING) TO AVOID DRYING OUT OF THE BEEF AND ENJOY ITS FULL FLAVOURS
